Lars & Margo presents to you our very first yeast fermentation coffee by specialist coffee producer Wilton Benitez. Leading the way in coffee fermentation (with a background in fermentation technology used in wine, beer and cheese) Wilton has taken his expertise to control key variables in coffee processing. Three essential factors are consistently followed - the precise fermentation process, the use of tailored microorganisms and the act of sealing in flavours using a hot and cold water technique.

Artwork - It’s taken a while for us to get things to align but we’ve done it! We are thrilled to introduce Calstock based mixed media artist (aka Fluoro Queen and a very fond friend!) Jules Greaves www.instagram.com/julesgreavesartist who kindly donated her image for our limited edition bean run. Inspired by the every day, the domestic and the natural Jules works in the brightest of brights with subliminal undertones of a deeper conscience.

At Lars & Margo, our coffee tastes great because our farmers genuinely care for their plants and equally their environment.

Following that we give the beans plenty of attention at the Lars & Margo Roastery—we roast by hand, keeping things light to medium so the real flavours in every bean can shine through. The end result? A seriously great cup of coffee.

We source our green beans, through various UK based green bean merchants, who partner with farmers around the entirety of the coffee belt. Lars & Margo then choose beans not just for their origin, varietal, process or tasting profile, but to ensure fair pay to farmers, fresh ideas are supported and there is a drive towards inclusivity and gender equality with further support going to local communities.

As a family business, we enjoy meeting new faces and share what we do. If you’re in Cornwall you wont have to travel far to find a local spot serving or stocking our freshly roasted beans, so a great cup of coffee is never far away.

We take our time with every batch—hand roasting the beans and packing them up with care.
