Process: Mountain Water Decaf
Tasting Notes: Chocolate, molasses, spices, orange acidity, creamy body.
This coffee consists of the Typica, Mundo Novo, Bourbon and Caturra bean varietals. Mountain Water Decaf Quetzal originates from 24 communities located across the VI Frailesca region and the Sierra Mariscal, traversed by the Sierra Madre de Chiapas, Mexico. The altitude of the small holdings range between 1,200 and 1,800 metres above sea level.
The Mountain Water Decaf process, developed by Descamex in Córdoba, Veracruz, uses pure water from Pico de Orizaba to remove caffeine from green coffee beans without chemicals. This method preserves the flavour and aroma of the coffee while removing up to 99% of the caffeine.
