This coffee consists of the Catimor and Pache bean varietals from the Vista Hermosa Collective and is certified organic. The Vista Hermosa is a collective of small farmers located in the Jaen and San Ignacio Provinces in the Cajamarca Region of Northern Peru. The altitude of the small holdings range between 1,150 and 1,400 metres above sea level.

These beans are selectively harvested by hand ensuring that only the absolutely ripe coffee cherries are selected, they are then washed with spring water and then manually pulped. The coffee cherries are then left for a period of fermentation before being naturally dried to 12% when they are readied for export.

The detailed grader tasting notes for this coffee are as follows - Lots of dried fruits giving the sweetness to this coffee together with brown sugar and almonds in a round cup, with a soft citric acidity well integrated.
