This coffee is the Tim Tim bean varietal from the Burni Telong Co-Operative, which is a collective of 60 small farmers located on the slopes of the Burni Telong volcano, which translates as ‘Fire Mountain’, in the sub-districts of Karang Rejo, Panji Mulia & Babbusalam Redelong.
These farmers are all speciality coffee growers whose average farm size is between 0.1 - 1 Ha. The altitude ranges from 1300 - 1600 meters above sea level, their coffee is processed by the unique to Sumatra Giling Basah process.
This describes a process where the bean is de-hulled soon after harvesting whilst still containing a high moisture content (25-50%) much greater than you would find in other countries. This is mainly due to the high humidity levels experienced throughout the country. The Giling Basah process is what gives Sumatran coffee its unique character.
This coffee is curated by Mahdi who is passionate about the coffee from his area. He ensures that the collectors ferment the coffee correctly and dry it to a moisture content of 35% when it is de-hulled before a second drying to 15%. The coffee is then hand sorted in the local town of Takengon when the coffee is dried again to below 13% and it is prepared for export.
