The Natural Yirgacheffee Chelbesa is from the well-known coffee area of Worka Chelbesa in Ethiopia's Gedeb district. This region has thick, semi-forest vegetation, with shade-grown coffee trees and false banana plants, making it perfect for producing high-quality coffee.
In 2019, SNAP Specialty Coffee set up a wet mill in Danche, Chelbesa Village, to process red cherries from local farmers. The ceramic fermentation tanks help improve the coffee's clarity by keeping the heat, speeding up fermentation. The process includes 72 hours of wet fermentation, one hour of soaking, and 12 days of drying on raised beds. The coffee, grown at altitudes of 1,950 to 2,200 meters, comes from 763 farmers and is harvested from November to January. It is processed in different ways, including fully washed, natural, anaerobic washed, and anaerobic natural, offering a variety of flavours.
